Ingredients:
• 1 (30 oz) package frozen hash browns, thawed
• 1 lb breakfast sausage, bacon, or ham (cooked and crumbled)
• 8 large eggs
• 2 cups shredded cheddar cheese (or cheese blend)
• 1 cup milk (whole or 2%)
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp smoked paprika (optional for flavor)
• Salt and pepper to taste
• Chopped green onions or parsley for garnish (optional)
Instructions:
1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. Cook the Meat: If using sausage or bacon, cook until browned and crispy. Crumble and set aside.
3. Assemble Casserole: Spread the thawed hash browns evenly in the bottom of the greased dish. Layer the cooked meat over the hash browns.
4. Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, smoked paprika (if using), salt, and pepper.
5. Add Cheese: Sprinkle 1½ cups of shredded cheese over the meat and hash browns.
6. Pour Egg Mixture: Evenly pour the egg mixture over the top of the hash browns, meat, and cheese.
7. Top with Cheese: Sprinkle the remaining ½ cup of cheese on top.
8. Bake: Bake in the preheated oven for 40-45 minutes, or until the center is set and the top is golden and bubbly.
9. Cool and Serve: Let the casserole cool for about 5 minutes before slicing. Garnish with green onions or parsley if desired.

• Prepare the casserole the night before and refrigerate. Bake it fresh in the morning.
