Here’s a classic sweet potato casserole recipe that’s creamy, sweet, and topped with a crunchy pecan topping!

Ingredients:

Sweet Potato Mixture:

• 4 cups mashed sweet potatoes (about 4 large sweet potatoes)

• 1/2 cup granulated sugar

• 2 large eggs, beaten

• 1/2 cup melted butter

• 1/3 cup milk

• 1 tsp vanilla extract

• 1/2 tsp salt

Pecan Topping:

• 1/2 cup brown sugar

• 1/3 cup all-purpose flour

• 1/3 cup melted butter

• 1 cup chopped pecans

Instructions:

1. Prepare the Sweet Potatoes:

• Preheat your oven to 350°F (175°C).

• Peel and cut sweet potatoes into chunks. Boil in water until tender, about 20 minutes. Drain and mash.

2. Make the Sweet Potato Mixture:

• In a large mixing bowl, combine mashed sweet potatoes, sugar, beaten eggs, melted butter, milk, vanilla extract, and salt. Mix until smooth.

3. Assemble the Casserole:

• Spread the sweet potato mixture into a greased 9×13-inch baking dish.

4. Prepare the Pecan Topping:

• In a separate bowl, mix brown sugar, flour, melted butter, and chopped pecans until well combined.

5. Add the Topping and Bake:

• Sprinkle the pecan topping evenly over the sweet potato mixture.

• Bake in the preheated oven for 25-30 minutes, until the topping is golden brown and the casserole is heated through.

6. Serve:

• Let it cool slightly, then serve warm.
